mini egg cookies

Ingredients

3/4 cup granulated sugar 2 large eggs 1 Tablespoon vanilla extract 1 cup semi-sweet chocolate chips 9 ounces Cadbury mini eggs

3 1/4 cups all-purpose flour 1 teaspoon salt 1 teaspoon baking soda

1 cup light brown sugar, gently packed 1 cup unsalted butter, room temperature

Directions

1. Place the Cadbury mini eggs inside of a zip-top bag and use a mallet, rolling pin, or the bot tom of a sturdy cup to break up the candies into smaller pieces. Keep some pieces larger by only breaking in half. Set aside. 2 . Preheat the oven to 350 degrees Fahrenheit. Line cookie sheet trays with parchment paper or a silicone baking mat. Set aside.

3. Stir together the flour, salt, and baking soda in a large bowl. Set aside.

4. In the bowl of a stand mixer fitted with the paddle attachment, combine the butter and both sugars. Cream until light and fluffy. Add the eggs and vanilla. Mix well and scrape the bowl with a spatula. 5. Add the dry ingredients to the butter mixture and mix until just combined, about 1 minute. Add the chocolate chips and all except 1/2 cup of the crushed Cadbury mini eggs. Mix gently on low speed until just combined, about 30 seconds. 6. Use a #30 cookie scoop (about 2 Tablespoons) to spoon the cookie dough into a ball and place onto the prepared baking sheet about 3-inches apart. (8 cookies per tray.) Generous ly press the remaining Cadbury mini egg pieces into the tops of the cookie dough balls while maintaining a round shape. 7. Bake at 350˚F for 10 minutes or until the edges are just barely starting to brown. For thicker cookies, immediately press the edges inward with a serving spatula or swirl with a round cook ie cutter while still warm. Allow cookies to cool for 1-2 minutes on the tray, then transfer them to a wire rack to cool completely.

Ingredients 1 1/2 cups all-purpose flour 1 teaspoon baking powder 1/4 teaspoon salt 1 cup packed light brown sugar 1/2 cup granulated sugar 12 tablespoons salted butter, melted

2 large eggs 1 1/2 teaspoons vanilla extract 1 cup pastel colored M&M’s 1/2 cup pastel sprinkles

Directions

1. Preheat oven to 350°F and line a 9×13 baking dish with parchment paper, all the way up the sides.

2. Melt butter and let it come to room temperature.

3. In a medium sized bowl, combine the flour, baking powder and salt together.

4. In a mixing bowl fitted with a paddle attachment, combine the melted butter, brown sugar and sugar. Then add the eggs and vanilla. Gently fold in the flour mix ture, then fold in the M&M’s and sprinkles. 5. Spread batter into the lined baking dish and smooth the top (it will be thick). Sprinkle more sprinkles and M&M’s on top. Bake for 20-25 minutes or until lightly golden on top, rotating pan halfway through baking. The middle will still be a little gooey but they will continue to bake even after you take them out of the oven. Do not over-bake or they will be dry! Remove from oven and let cool completely be fore cutting into squares.

Ingredients

16 ounces brick-style cream cheese softened 1 cup powdered sugar 2 teaspoons fresh lemon juice 1 teaspoon pure vanilla extract 1 1/2 cups cold heavy whipping cream 1 1/2 cups mini eggs (crushed)

1 1/2 cups graham cracker crumbs 1/4 cup granulated sugar 6 tablespoons unsalted butter, melted

no bake cheesecake Directions 1. Line the bottom of a 9-inch springform pan with parchment paper. Set aside. Combine the graham cracker crumbs and granulated sugar in a medium-sized mix ing bowl and stir until well combined. Add the melted butter and mix until all of the crumbs are moistened. 2. Scoop the mixture into the prepared 9-inch springform pan and firmly press it into the bottom of the pan. Transfer to the refrigerator to chill while you prepare the filling. 3. In the bowl of a stand mixer fitted with the paddle attachment, or in a large mix ing bowl using a handheld mixer, beat the cream cheese for 1-2 minutes or until smooth. Add the powdered sugar, fresh lemon juice, and vanilla extract and mix until fully combined, stopping to scrape down the sides of the bowl as needed. Set aside. 4. Add the heavy whipping cream to a separate mixing bowl, using a handheld mixer or stand mixer fitted with the whisk attachment, mix on low-medium speed for 30 seconds to 1 minute then increase the speed to medium-high and continue mixing until stiff peaks form. 5. Gently fold one-third of the whipped cream into the cream cheese mixture until just combined. Then fold in the remaining whipped cream until fully combined. Then mixed in 1 cup of crushed mini eggs 6. Remove the springform pan with the crust from the refrigerator and scoop the filling on top of the crust. Spread the filling into one even layer and smooth out the top. 7. Cover tightly and transfer to the refrigerator to chill for at least 6 hours or over night. Carefully release from the springform pan (slice a knife around the outside if needed), then slice, top with remaining 1/2 cup crushed mini eggs and enjoy!
