Serves 8-10 2 cups cooked wheat bulgur 1 cup fresh mint, chopped 1 cup fresh Italian Parsley, chopped 1 small red onion, sliced thinly 1 each red and yellow peppers, chopped 1 English cucumber, chopped 2 roma tomatoes, chopped For the dressing: 1/2 cup freshly squeezed lemon juice 1/2 cup extra virgin olive oil Salt and cracked pepper to taste Directions:
2 pints assorted cherry tomatoes 1 cup kalamata olives 2 cans artichokes, drained and cut into quarters 1 medium red onion, sliced thinly 1 loaf of focaccia or ciabatta, cut into 1 inch cubes

Whisk together the dressing ingredients in a small bowl. Combine everything else in a large serving bowl and then pour over the dressing and mix well to combine. Add more salt and pepper if needed, then cover and chill for at least 20 minutes or up to 1 day in advance.

Prepare the dressing by combining all the dressing ingredients in a food processor or blender. Blend until smooth and then season to taste with salt and pepper. To prepare the salad, toss the bread with the 2 Tbsp oil and spread it onto a baking sheet. Sprinkle it with salt and pepper and then toast it in the oven under a high boiler for 2-3 minutes, until dark golden and toasted. Combine all the remaining salad ingredients in a large serving bowl and then add the dressing and the breadcrumbs and toss to combine. This salad is best if eaten straight away and at room temperature, but if you are preparing it ahead of time, just store the toasted bread, veggies and dressing separately for up to 1 day and then toss it together right before serving.

HADDOCK EN PAPILLOTE WITH SUMMER VEGETABLES PEI SEAFOOD RECIPES
CLASSIC LOBSTER ROLLS WITH HOMEMADE LEMON MAYO
Serves 4
4 split top White Rolls 2lb cooked lobster meat (from 7-8 lobsters) 4 Tbsp salted butter 4 leaves lettuce (romaine, butter or leaf lettuce are all great! For the mayo: 1 egg at room temperature
4 sheets parchment paper, at least 11x18 inches each 1 cup thinly sliced zucchini 1 cup julienne carrot 1 cup fresh peas or snow peas 2 cups chopped beet green or swiss chard leaves 4 x half-pound haddock filets (cod or hake also work well) Sprigs of fresh herbs like parsley, dill, tarragon or chives (as much

Preheat your oven or BBQ to 400F. Lay the sheets of parchment out on your work surface, then build the papillotes on one half of each sheet of parchment. Start by dividing the zucchini, carrots, peas and greens between the 4 sheets, making a pile right in the centre of one half of each sheet. Lay the fish on top of the veg- gies, then top with herbs, lemon, white wine and a pat of butter. Season everything with a sprinkle of salt and freshly cracked pepper then fold the bare side of the parchment all the way over and fold the edges of the parchment to make a sealed envelope. Repeat with all the packets and then transfer them to a baking sheet. (If you are cooking on the BBQ, make sure the edges of the parchment are tucked inside the rim of the baking sheet, or else they will catch fire!) Bake for 20-25 minutes, until an instant-read thermometer stuck into the centre of the packet reads 165F. Carefully transfer the packets to plates and cut open their tops with a sharp paring knife or scissors. Garnish with some more fresh herbs and enjoy!
Make the mayo: Combine the egg, Dijon and a pinch of salt in the bowl of a food processor and blend until foamy and pale. Add oil, a few drops at a time, then the rest in a slow steady stream until it is fully incorporated. Add lemon juice and zest and blend again, then stir in chives and season to taste with salt and pepper. Cover and refrigerate until ready to use. To make the lobster rolls, combine the lobster meat and mayonnaise in a medium bowl and season to taste with salt and freshly ground black pepper. Preheat a heavy bottom skillet over medium heat. Spead the sides of each bun with butter and then toast on each side in the pan until golden brown and crispy. Remove from heat, add a piece of lettuce to each bun, then fill with lobster mixture. Enjoy right away!

GRILLED OYSTERS WITH TOMATOES AND SMOKY GARLIC BUTTER
TOMATO AND FENNEL SEAFOOD CIOPPINO

Makes 12 oysters
1/4 cup olive oil 1 large onion, minced 3 cloves garlic, minced 1 Tbsp dried oregano 1 tsp chili flakes 1 head fennel sliced thinly 1/2 cup dry white wine 1 can (3-4 cups) no-salt whole peeled tomatoes 500ml clam juice or fish stock 1lb raw mussels, washed 1/2lb raw scallops 1/2lb raw shrimp 1/2lb cubed fish such as haddock or cod Salt and pepper Fresh chopped basil to garnish Directions:
12 large oysters, shucked and on the half-shell 4 Tbsp salted butter, softened 1 clove garlic, minced 1 tsp smoked paprika 1/2 lemon, juice and zest 1 Tbsp each fresh parsley and chives, chopped 1 vine-ripe tomato, chopped finely Directions: Preheat your grill to 450F. Make the garlic butter by mixing together the butter, garlic, paprika, lemon and fresh herbs. Lay the oysters shell-side down on the grill, then divide the chopped tomato between them and then top each with about 1 tsp of the garlic butter. Shut the lid of the grill and let the oysters cook for about 3 minutes, until the butter is melted and the oysters are beginning to brown. Serve right away.

PIERRE SPARR CREMANT D’ALSACE BRUT RESERVE
Heat a large dutch oven over medium heat, then add the oil, onion, garlic, spices and fennel to the pot. Cook, stirring often, for about 5 minutes, until the fennel and onion are translucent. Add the wine and cook another 5 minutes, until all the liquid is gone. Add the juice from the can of tomatoes, then crush the tomatoes into chunks using your hands and add them to the pot. Add the clam juice and then reduce heat to low and simmer for 1 hour. Turn the heat back up to medium and bring the pot to a simmer, then add all the seafood at once. Stir the pot gently a couple of times, then let the seafood cook for about 5 minutes, stirring gently once or twice. Taste the broth and add more salt and pepper if needed. Remove the pot from the heat, divide into serving bowls and garnish with fresh chopped basil and serve with crusty bread. Enjoy!

MUSSELS AND CLAMS WITH FRESH HERBS AND CREAM

1/4 cup butter 1 small onion, minced 2 cloves garlic, minced 1/4 cup dry white wine 1 lemon, cut into slices 2 Tbsp each chopped fresh parsley, tarragon and chives 250ml heavy cream 2lb PEI mussels, cleaned 2lb PEI softshell clams, cleaned Directions: Heat a heavy-bottom Dutch oven over medium heat. Add the butter, onion, and garlic and sauté for 2-3 minutes, until the onion starts to brown. Add the white wine and cook for another 2-3 minutes, until all the liquid is gone. Add the lemon, cream, fresh herbs and cream, and cook for 10-12 minutes, until the sauce is thickened and reduced by 1/3. Add the clams and cook, covered, for 3 minutes. Add the mussels and cook another 3-4 minutes, stirring once, until all the mussels and clams are open. Serve right away with fresh bread. Enjoy!

SPARKLING LEMON AND ELDERFLOWER PUNCH Serves 4-6 1 lemon, juiced and zest set aside 3 Tbsp white sugar 250ml sparkling elderflower cordial 1 bottle Ruffino Prosecco Ice Fresh slices of lemon for garnish Fresh elderflowers for garnish Fresh mint for garnish Directions: Mix the lemon juice and sugar together in a large pitcher until it dissolves. Add the lemon peel, cordial and prosecco and then fill the rest of the pitcher up with ice. Serve right away in a glass filled with ice and garnished with lemon slices, fresh mint and elderflower blossoms if available.
MELON AND LYCHEE PUNCH Serves 4-6
SPICY CUCUMBER, GIN, AND BASIL PUNCH Serves 4-6 1 cucumber, sliced thinly 1 lemon, sliced 1 lime, sliced 1 cup fresh basil leaves 8 oz Hendricks Gin 1-3 tsp sriracha, or to taste 500 ml tonic water, or to taste Ice Freshly cracked black pepper to garnish Directions: Stir the first five ingredients together in a large pitcher and stir well to combine. Add the tonic water and hot sauce to taste, then top up the pitcher with ice. Serve right away with some of the fruit and cucumber slices, garnished with some freshly cracked black pepper.

4 cups balled melon of your choice (try watermelon, honeydew and cantaloupe) 1 can of peeled lychee fruit, including the syrup Juice of two limes 8 oz Absolut Lime Vodka 500ml club soda, or to taste Ice Lime wedgges to garnish Directions: Mix everything except the soda together in a large pitcher. Fill the pitcher up with ice and then top up with soda to taste. Serve right away in a tall glass. Scoop out some of the melon balls and lychee pieces into the glass, pour over the liquid, then garnish with a slice of lime.

With a rich history of winemaking, Duckhorn Vineyards in Napa Valley produces very nice classic wines. French oak barrel fermentation with lees stirring results in a very complex and flavorful Chardonnay. This wine has aromas of pear, lemongrass, ripe peach and graham cracker. On the palate the silky texture creates weight and volume with an elegant acidity framing the stone fruit and citrus flavors. The finish is long and fresh with hints of lemon zest and cloves.
The “Champs de Cri” is an important parcel of 2.3 hectares known to produce some of the most elegant and long-lived wines of the appellation. This Sauvignon Blanc- based wine is fresh and lively with lots of flint laden fruit on the nose. The palate is dry and full-bodied with herbaceous and mineral notes with a long, elegant finish. This wine pairs amazingly with fresh beer battered haddock and chips with a side of garlic lemon aioli.
From the world renowned Trapiche winery in Mendoza Argentina this fruit forward Chardonnay reveals tropical fruit aromas mixed with lemon blossom and citrus along with a touch of spice, honeysuckle and brioche. Peumo, in the Rapel Valley, receives sufficient cooling influence from the ocean for the climate to be warm but not too hot: just right for producing its renowned Carmenères. Deep ruby red in color. The nose reveals aromas of ripe blackberries, plums and a hint of spice, all framed by an elegant touch of cedar from the well-integrated oak-ageing. Mature and fresh on the palette, it displays subtle notes that give character to this classic Carmenère. Mature tannins give it structure and texture for a persistent finish. A slice of beef brisket with a goat cheese stuffed bell pepper would be the perfect accompaniment for this wine.
Believe it or not, Prince Edward Island was the very first place this brand new wine has been available in North America. It was unveiled at the 2018 Wine Festival in Charlottetown and certainly does not disappoint. The clay-loam soils over a granite base in Cauquenes, 350 kilometers south of Santiago, contribute structure and character to this wine. It is a bright, intense violet red in color with aromas of plums, cherries and toast from ageing in oak barrels. This hearty Cabernet is well structured with firm tannins and an abundance of dark fruits. A big wine such as this deserves a big piece of red meat, slow roasted to perfection with your favourite vegetable medley. This wine is a must try!
This wine marries dense dark fruit flavors with subtle minerality and muscular structure. Complex aromas of juicy dark fruits and hints of violet and wild flowers entice the palate. Abundant fruit flavors of ripe black currant and plum are framed by hints of black pepper and baking spices leading to a lingering luscious finish. Barbequed sirloin and potato salad on the patio is a must try this summer season.
The Campo Viejo winery located in the Rioja region in Spain produces spectacular wines and this Rosé is no exception. A raspberry-pink color, warm attractive and very bright. This wine has strawberries, plums, blackberries, with floral notes of roses and violets on the nose. Fragrant in the mouth, round, soft and smooth, with just the right amount of crispness. The perfect patio wine for the summer season. Light appetizers or a salad work well with this refreshing rosé.
This winery is named for mercenary vineyard guardians, “Saltari” hired by vineyard owners from the 16th through the 18th centuries to protect their grapes from thieves and bandits. Deep ruby in color, this wine has oaky tobacco notes on the nose with an intense, peppery, minerality. On the palate it shows subtle spices with licorice and dried dark fruit. This powerful red will pair beautifully with osso bucco or wild game lasagna.
