track and reinforce your progress, no matter what your goal might be. Be sure it’s Achievable. Trying to take big steps too fast can leave you frustrated or overwhelmed to the point that your goal takes over your life. Be realistic in your plans; if you’ve never been to the gym before, suddenly going 5 times a week is a big change to make very suddenly. Start small and then work your way up to those big goals. Create goals that are Relevant. Be sure to set goals because they really matter to you, not because someone else wants it- or because society wants you to change. If you want to make changes out of desperation or because of a moment of passion, you might not be as motivated to follow through. Make your goals Time-Bound. The timeline you set for reaching your goal should be realistic but firm, so give yourself enough time to get there. Try setting up smaller intermediate goalposts along the way and focus on these small wins so you can make gradual progress over a set amount of time. Whatever your goals are for the new year, be kind to yourself, be patient and stay pos- itive. Happy New Year!
Are you setting any goals this year? This January 1st marks a brand new year, so it could be a time to take stock, get inspired and make a plan for the months to come. Here’s how to identify the right resolution to improve a specific part of your life, and make a plan on how to reach it. When considering any life changes, wheth- er big or small, your goals should always be smart – and S.M.A.R.T. This acronym was coined in the journal Management Review in 1981 for specific, measurable, achiev- ab;e, relevant and time-bound. It may work for business, but it can also be helpful in setting your personal goals, too. Be Specific. Your goals should be absolute- ly clear. Instead of a vague resolution like “I want to cut down on social media time”, you could say “I will cut my social media time down to half an hour a day”. Be sure your goals are limited in their scope and unambiguous in their meaning. Make it Measurable. This one’s easy if your goal is fitness or weight loss related, but it should apply to other goals as well. Find a way to measure your success; start filling up a jar with cash you would otherwise spend on fast food, or start a journal logging your exercise. Measuring and documenting your successes can help you

Recipes Freshen Up YourWinter
• 1 package halloumi cheese, cut into 1 inch cubes • 1 pint ripe cherry tomatoes • 6 x 10-12 inch wooden skewers (soaked in water for at least 20 minutes) • Arugula for serving Directions In a medium bowl, mix together the oil, basil, garlic, chili flakes, salt and pepper. Add the zucchini, tomatoes and halloumi and toss well to combine. Thread the veggies and cheese onto the skewers and preheat your grill or BBQ to 400F. Brush the grill and rub with a little canola oil to prevent sticking. Grill the skewers for about 4 minutes on each side, until lightly charred and no longer pink in the centre. Serve right away on a bed of fresh arugula.
Crunchy Beet & Walnut Salad From page 19 Serves 6
Falafel Burger From page 18 Makes 4 Falafel Burgers
• 6 cups arugula or spinach • Juice and zest of 1/2 orange • 1/4 cup olive oil • Salt and pepper to taste • 2 large raw beets, peeled and sliced thinly • 1 cup walnut halves • ½ cup feta or soft goat cheese Directions In a large serving bowl, make the dressing by whisking together orange juice and zest and olive oil. Season the dressing to your taste with salt and pepper. Add the greens and toss well to coat with the dressing. Top with beets, walnuts and crumbled cheese.
• 1 can chickpeas, drained, rinsed and patted dry • 1 tsp each cumin and coriander • ½ cup parsley leaves • 1 clove garlic, minced • 1 small red onion, minced • ½ tsp each salt and pepper

For the toppings: • Sliced radishes • Sliced cucumbers • Pickled turnip • Maroun’s garlic paste from Cedar’s Eatery • 4 sesame buns, cut sides brushed with olive oil Directions Combine all the patty ingredients in a me- dium bowl. Use a potato masher or pastry cutter to mash up the chickpeas, until a rough paste is formed. Form the mixture into 4 patties about ¾ inch thick and refrig- erate for at least one hour. Preheat one side of your grill at 450F for at least 10 minutes. Place the patties on the hot grill and cook for 5 minutes on one side, then flip and cook another 4 minutes, then remove to a cooler side of the grill. Reduce heat to 350F and grill buns until golden brown and crispy. Build your burgers as desired and enjoy!
Strawberry Rhubarb Pie From page 31 Makes 1 Pie • 1 cup white sugar • ½ cup all purpose flour • 3 cups fresh rhubarb, chopped into ½ inch pieces • 4 cups halved fresh strawberries • Zest of 1 orange • 2 tbsp butter • 1 recipe pastry for a double-crust pie • 1 egg yolk, beaten
Grilled Zucchini, Tomato, and Halloumi Skewers From page 20 Makes 6 • 1 Tbsp olive oil • 1 handful fresh basil, chopped • 1 clove garlic, minced • ½ tsp chili flakes • 1 tsp salt • 1 tsp pepper • 1 x 1 lb green zucchini, cut into rounds
Directions Preheat oven to 400°F
In a large bowl, mix flour and sugar. Add strawberries and chopped rhubarb. Toss with sugar and flour and let stand for 30 minutes. (Cont. on next page)

Unwrap the pie dough and unfold onto bak- ing sheet, then spoon the blueberry mixture onto the center of the dough, leaving a 1 1/2-inch border around the edge. Fold the edges of dough over the sides of the blueberry mixture, pleating the dough lightly. Dot the blueberry filling with the butter pieces, then lightly brush the pastry with some of beaten egg and sprinkle with remaining teaspoon sugar. Bake until the blueberry filling is bubbling and the pastry is golden, about 25 to 30 minutes. Cool slightly on baking sheet on a rack and serve warm galette with scoops of ice cream.
Directions Preheat your oven to 350°F. Lightly grease one 9x9 inch cake pan. Prepare the streusel: In a medium bowl, whisk together the sugar, flour, cinnamon and pinch of salt. With your hands, work the softened butter into the flour mixture until it resembles a coarse crumble, then set aside while you prepare the cake batter. Prepare cake: In the bowl of a mixer, cream together the butter and sugar until pale and fluffy. Add the egg, yogurt and vanilla and beat to incorporate. In a separate bowl, sift together the flour, baking powder, baking soda, and salt. Stir flour mixture into the wet batter until just combined – be careful not to over mix. Gently fold the sliced peaches into the batter. Pour the batter into the prepared pan, then top with an even layer of streusel mix. Bake for approximately 30 minutes, or until a toothpick inserted in the center of the cake comes out clean. Cool for at least 15 minutes before cutting and serving.
Roll out ½ the pastry recipe and place in bottom of pie tin. Roll out remaining crust and use a cookie cutter to cut into shapes, set aside. Pour filling into pie crust. Dot top with butter, then decorate using cut-outs. Use a pastry brush to apply yolk to top of pie. Bake for 35 to 40 minutes, or until bubbly and brown. Cool on a rack for 30 minutes before serving.
