Fennel, Orange and Avocado Salad Serves 2 INGREDIENTS 1 bulb fennel, sliced very thinly 1 avocado, peeled and sliced in wedges 2 blood oranges, cut into slices 2 cups baby arugula For the Dressing: Juice and Zest of ½ a medium lime 1 tsp sugar 3 Tbsp extra virgin olive oil Salt and pepper to taste DIRECTIONS

Whisk together all the dressing ingredients and season generously to taste with salt and pepper. Arrange the greens in a serving bowl or on a platter, and top with half the dressing and toss to combine. Add the cut-up fennel, orange and avocado, then drizzle with the remaining dressing and enjoy right away.
